Pilar's Breakfast Bars

Breakfast Bars

1 – 14 oz can condensed milk

2½ cups rolled oats (not instant) – I’ve made batches with steel cut oats too, and they’re both good…just a bit different consistency

1 cup shredded coconut – I don't like coconut, and it’s not a problem skipping this completely

1 cup dried cranberries – I have been experimenting with mixing different dried fruit; cherries, cranberries and blueberries all work well

1 cup mixed seeds (pumpkin, sunflower, sesame) – I'm not a sesame seed fan, so I split between the other two seeds

1 cup natural unsalted peanuts

1. Preheat oven to 250 degrees, and oil a 9" by 13" baking pan

2. Mix the dry ingredients together in a large bowl

3. Warm the condensed milk

4. Add the warmed milk to the other ingredients, mix using a rubber spatula to fold

5. Spread the mixture into the oiled pan, and press down to distribute evenly

6. Bake for 1 hour, remove, and after about 15 minutes, cut into bars and remove from pan, let cool completely – For Weight Watchers fans, if you cut it into 20 bars, they’re 4 points each; 16 bars are 5 points each

7. Store in plastic container, no need to refrigerate
